Abstract

The invention relates to a process for brewing selenium-enriched dry red wine, belonging to the technical field of process for brewing selenium-enriched dry red wine. The process comprises the following process flows of: 1. sorting; 2. crushing and processing selenium-enriched red grape; 3. carrying out main fermentation to the selenium-enriched dry red wine; 4. separating peel and slag; 5. carrying out secondary fermentation to the selenium-enriched red grape; 6. adding sulfur dioxide; 7. clarifying; and 8. bottling the selenium-enriched dry red wine. The process has simple process flow, andthe prepared dry red wine has mellow taste, is full of aroma, is crystal clear, is full of the selenium element beneficial for the body and has excellent drinking and appreciating value.
本发明涉及富硒干红葡萄酒的酿造工艺,属于葡萄酒的酿造工艺技术领域。包括以下工艺流程:1、选料;2、富硒红葡萄的破碎加工;3、富硒红葡萄的主发酵;4、皮渣分离;5、富硒红葡萄的后发酵;6、添加二氧化硫;7、澄清;8、富硒干红葡萄酒的装瓶。本发明工艺流程简捷,制得的干红葡萄酒味道醇美,酒香四溢,晶莹剔透,并且富含有对身体有益的硒元素,极具饮用及观赏价值。
